Ingredients
2 eggs
Whatever you can find in your fridge or pantry (roasted veggies, beans, spinach, onions, etc.)
Optional: a slice of sourdough or lentil wrap, avocado, sauerkraut or kimchi, a small breakfast salad
Directions
Crack your eggs into a small bowl and whisk lightly.
Heat a frying pan over medium heat. Add whatever ingredients you're working with — roasted veggies, beans, greens, leftover grains — and sauté for 1–2 minutes.
Pour in your eggs and scramble everything together until just cooked through.
Serve on a slice of sourdough, wrapped in a lentil wrap, or on top of a simple breakfast salad dressed with olive oil, vinegar, and a pinch of salt.
